First heat the oil in a pressure cooker, add mustard seeds and curry leaves and add onion. Saute the onion. Add chopped tomatos and rest of the veggies and dry masalas. Add dalia and washed daal into the pressure cooker. Take 3 whistles. when Khichdi is ready drizzle lemon juice and sprinkle cilantro.
Slit brinjals vertically and horizontally away from the stem in a plus sign form. In a grinder make paste with finely shopped onions, amchur, red chilli powder, turmeric powder, garam masala, methi seeds and salt.
